Slow Cooker Beef & Vegetable Stew
Slow Cooker Beef & Vegetable Stew (modified from a WW etools recipe) 2 garlic cloves, minced 2 medium sweet potatoes, cut into bite size chunks 1/2 pound baby carrots, cut in half 8 small uncooked new potatoes, cut in quarters 4tbsp fresh lemon juice (juice from two lemons) 1 1/2tsp salt 1/2tsp black pepper 1/4tsp ground cinnamon 1 medium red onion 1 1/3lb raw lean beef brisket, trimmed 1 1/2c beef broth Place onion, beef, garlic, sweet potatoes, carrots, new potatoes, 2 tablespoons of lemon juice in a 5- to 6-quart slow cooker. Add salt, pepper, cinnamon and broth; stir well. Cook on low setting for 7 to 8 hours. About 5 minutes before serving, stir in remaining 2 tablespoons of lemon juice; cover and cook on low for 5 minutes. Yields about 1 1/2 cups of solids and gravy per serving. NOTE: Original recipe called for 16 prunes & 5tsp honey. The prunes and 1T of honey get added at beginning of cooking. The remaining 2tsp honey gets added at the end with the extra lemon juice. I didn't want it sweet, so I left the prunes and honey out. I would add a bit more salt next time.

After having a very nice brisket dinner in L.A. (Thanks Jill!), I decided I wanted to try it at home. I used a slow cooker recipe for brisket with bbq sauce.
