1⅔ cups sugar
1 cup of cooking oil
1 16 ounce can of pumpkin
2 cups flour
2 teaspoons baking powder
2 teaspoons cinnamon
1 teaspoon salt
1 teaspoon baking soda
Preheat oven to 350°F. Beat together eggs, sugar, oil, and pumpkin until fluffy. Stir together flour, baking powder, salt, cinnamon, and baking soda. Add to pumpkin mixture and mix thoroughly.
Spread batter in ungreased 13x9” pan. Bake 25-30 minutes, until a toothpick in the center comes out clean.
Cream Cheese Frosting
3 ounces of cream cheese, softened
½ cup butter, softened
1 teaspoon of vanilla
2 cups sifted powdered sugar
To make the cream cheese frosting, cream together cream cheese and butter. Add vanilla. Add powdered sugar a little at a time. Spread evenly on completely cooled pumpkin bars.
