Food chemists have often pointed out the disadvantage of too much milk and cottage cheese - ordinarily excellent foods - in cases of arthritis. The reason is obvious - they are extremely high in calcium and may contribute to the depositing of excess lime in the joints. SOME VITAL FOODS Apples The fact that apples are a protective food in that they build resistance by supplying minerals, vitamins and energy is well understood. But that they have other health-promoting qualities is just now being recognized. Apples and apple powder are now being used in the treatment of infant diarrhea, in fact for a number of bowel infections in both old and young. (Certain nutritionists believe that fresh apples in the diet help the body to absorb more of the iron and calcium contained in other foods.) One authority tells us that the exclusive use of raw ripe apples brings almost immediate symptomatic relief in diarrhea and bowel infections. Several reasons have been advanced for the value of apples and bananas as a treatment for the dysentery type of difficulty. Pectin, the factor so important in jelly making, seems to supply the answer. Because of the colloidal nature of pectin, that is, its ability to take and hold water, it takes up the excess water in the intestines and so changes the liquid stools to semisolid ones. It also gathers up various toxins and other infectious agents in its mesh at the same time and these, too, are carried out of the body. Dr. Edith Haynes at Indiana University School of Medicine demonstrated that pectin heals sores with remarkable speed. Said Dr. Haynes: "Pectin acts not only as a killer of organisms and bacteria, but stimulates the growth of tissue." It also has been successfully used on varicose ulcers. The fruit-acid salts of apples stimulate the digestive processes. Fresh apple juice is also said to be valuable in arthritis and rheumatic fevers. Campbell and Detwiller in "The Lazy Colon" state that unfermented apple juice is a "highly valuable remedy in gastric and intestinal catarrh, so-called biliousness, jaundice, constipation and in cases in which the kidneys and liver are disordered; in emaciation, loss of appetite and general malnutrition." Apples assist in the action of the gastric juice and stimulate the flow of the pancreatic secretion which acts as a solvent of almost all food constituents. Taken in the night, the juice acts as a nerve quietant and soporific. An apple concentrate or apple syrup known as Orpro, which appears to have decided tonic effects and to relieve the intestinal tract of excess mucus, is prepared by the D. L. King Laboratories, 4711 Fifth Ave., Los Angeles, and is available in many Health Food Stores. Bananas Many physicians have found bananas to be a food that meets certain requirements so well that they almost think of the fruit as a medicine. Baby specialists make considerable use of thoroughly ripened bananas in the feeding of young children. The heavy peeling makes it a safe food to be eaten raw for it comes in a sanitary, germ-proof package. In the treatment of diarrhoea, sprue or celiac disease a banana diet is the cornerstone of treatment. They are a regulator in constipation as well as diarrhoea. Dr. G. A. Bendlage uses a banana diet in the treatment of ulcers of the stomach. Celery Celery is truly a most excellent food because of its high sodium and potassium content. The sodium is beneficial in all acid states of the body. It is of value in stomach acidity and ulcers, in all types of rheumatism, especially arthritis; in neuritis; muscular stiffness and all pain conditions. Celery contains the necessary ingredients for maintaining the elasticity of tissues characteristic of youth and health - it is a preventative of the aging process. Relaxation and calming of highly emotional and nervous persons is claimed as one of the many virtues of celery.
