It's nice to make a meal that turns out so nice that you surprises yourself! About a month ago, I went to a restaurant and ordered a meal that I described as..."the best meal I've ever had".... so.... I decided that I was going to make it myself!! It's a portabello mushroom stuffed with shrimp, lobster, and crab meat sitting on top of a bed of heavenly risotto!! this was a very decadent meal... I can't imagine the fat, calorie, and cholesterol count....This isn't an every day meal, but occasionally, it's over the top!! I cooked the risotto in a seafood stock... I didn't put any seafood in the risotto because I piled so much of the shrimp, lobster and crab mixture on top of the portabello!! ( I rarely measure anything when I make dinner, so I had to estimate the measurements) RECIPE: 3 large portabello mushroom caps, cleaned... drizzle with a bit of olive oil, cover with foil and bake at 350 degree while you're making the stuffing! for the seafood stuffing, in a large bowl, combine: @ 2 T minced onions} use more or less depending on how much you like onions 2 T minced celery @ 1/4 to 1/2 tsp garlic powder} I used a California Garlic salt, it has bits of parsley & sea salt with the garlic powder 1 T parsley 1/4 tsp dill @ 1/2 cup panko bread crumbs... you can use standard bread crumbs @ 3/4 cup shredded Italian blend cheese (it has mozarella, provolone, romano, fontina,asiago, and parmesan cheese in it) you can use any cheese you want! 1/2 of a beaten egg {use the other half for scrambled eggs} mix all of the above ingredients, then add the seafood...( fold gently after the seafood is added so that you dont smoosh the crabmeat!) then add the seafood that you like, I used: @ 1 1/2 cups of shrimp... any size will work as long as they are peeled & deveined with tail off. I chopped mine into large pieces! @ 3/4 crab meat.. I used a can of lump crab meat @ 3/4 cup of lobster meat ( if you want to skip the lobster, you can use any type of seafood, scallops would work nicely, or any mild fish) after this is all mixed up, remove the mushrooms from oven, and place large scoops of the mixture on top of the mushrooms.... drizzle with olive oil then just bake for @ 25 minutes... the last 5 minutes of the baking process, I broiled them until the stuffing was slightly golden brown! For the risotto, I used 1 cup of stardard arborio rice, sauted in @ 2 T butter, for 5 minutes, then I added @ 1 T minced onions, 1/2 tsp garlic powder, then I added 1/2 cup of white wine. After the wine was cooked off, I slowly add @ 4 cups of heated seafood stock.... @ 1/2 cup at a time.... this took about 45 minutes of cooking the risotto until the liquid is absorbed, then I added more. I made sure that the seafood stock was hot when I added it so that it didn't ruin the final results... and... I had to stir very, VERY often!! I served the mushroom caps on top of a serving of risotto and it was devine!! Let me know if you try this!!

My sister came up for Easter dinner last night and stayed over at my house and for breakfast we made scrambled eggs and toast (I'm usually lazy and live on cereal in the morning). When hunting through the spice cabinet we finally found seasoning salt and upon closer inspection this stuff defies the laws of physics! 1 gram of seasoning salt has 39 grams of carbohydrates... strange, very strange. Sure you can convert energy to mass as the all famous equation E = m*c^2 but last time I checked my seasoning salt wasn't involved in ground breaking science. I don't know where they're hiding those other 38 grams but I have a feeling that garden gnomes are the key to finding out. Also having 39 grams of carbs without having a single calorie either... diet people will be dying to get their hands on this stuff!
