Lotus Root Chicken with Chives
-- Lotus Root Chicken with Chives -- 1 lb. Boneless Chicken 3 Tbs. Sake 2 tsp. Soy Sauce 1 tsp. salt 2 Tbs. Oil 2 tsp.. Corn Startch or other Startch (Topioca, Potato etc.) 2 Cloves Garlic minced 1/2 lb. Garlic Chives (Triangular Stalk) 2 Lotus Roots 1/2 Cup Gingko Nuts 2/3 Cup Chicken Stock (boullion cube is fine) 1 Tbs. Oyster Sauce 2 tsp. Soy Sauce 1 tsp. Sesame Oil salt ---------------------- Directions: (1) Cut the chicken into bit sized cubes and put in a bowl. Add sake, soy sauce and salt. Let sit for at least 30 minutes. (2) Peel and half lengthwise the lotus root. Slice into 1/4 in thick slices. Set aside. Wash gingko nuts and place with lotus roots. Cut Chives into 2 inch long battons. Mince two cloves garlic. (2) Pre-heat the wok over high heat. Drain the chicken and coat with the startch. Pour the oil into the wok and add the chicken. Quickly spread it out over the bottom of the wok and the let cook undisturbed until browned on the bottom. Add garlic and stir every 10 second or so until finished cooking. Spoon out of pan into a waiting bowl. Leave the oil in the pan and let reheat on stove. (3) Add garlic chives sprinkle with salt and stir fry until lightly brown. Turn into the same bowl as the waiting chicken. (3) Add lotus root and gingko to the pan and briefly stir. Add the remaining ingredients, cover and simmer 10 minutes. Stir in chicken chive mixture and continue to cook 2 minutes to mix the flavors. Serve over rice.
