Cream of Tomato Soup - put that red & white can to shame...

A time machine straight back to childhood. Add a toasted cheese and it's pure comfort. 

1 TBS Butter
3 TBS Flour
1 Quart Tomato Passata or tomato puree
1/4 tsp baking soda*
1 TBS sugar
8 oz heavy cream
4 oz milk
1/2 tsp salt
black pepper to taste

In a large saucepan, melt the butter. Add the flour, mixing well to form a lump-free paste. 

Add the passata (or puree), cover and simmer for about 25 minutes stirring occasionally. 

Stir in the baking soda (the soup will foam up briefly; don't worry but be sure the pot is large enough), the sugar, the milks and the salt.  Heat, stirring to a bare simmer. Serve hot.
