What you'll need

  • 3 cups quick cooking oats
  • 2/3 cup brown sugar
  • 1/3 cup whole wheat flour
  • 1 teaspoon ground ginger
  • 2 teaspoon baking powder
  • 1 teaspoon salt
  • 2 eggs
  • 2 cups milk
  • 1/4 cup canola or vegetable oil
  • 1 teaspoon vanilla
  • 2 ripe nectarines, diced 

Directions

  1. Preheat the oven to 350˚F. Lightly grease a 9×13 inch baking dish and set aside.
  2. In a medium bowl, whisk together all of the ingredients, except the nectarines. Gently fold in the diced nectarines and pour into the prepared baking dish.
  3. Bake in the preheated oven for 25-30 minutes, or until set in the middle.
