Thin Mint Chocolate Donuts
A Sprinkle of This and That Recipe

Ingredients for 18 donuts:

1 cup flour

1/4 cu sugar

1/4 cup cocoa powder

1/2 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1/2 cup milk

1 egg, beaten

1/2 tsp vanilla extract

non stick spray

Ingredients for chocolate topping:

1/2 cup chocolate chips

1/3 cup whipping cream

20 mint fudge cookies, broken into small bits

Directions:

Preheat oven to 325 degrees.  Spray a mini donut pan with non stick spray.  In a small bowl, combine flour, sugar, cocoa powder, baking powder, baking soda and salt.  Mix in milk, beaten egg and vanilla extract.  When mixed well, pour into mini donut pan, halfway.  Bake in a 325 degree oven for 10-12 minutes.  Remove from pan and cool on wire rack.

Melt chocolate chips and whipping cream over medium heat, stirring constantly.  Dip donut into melted chocolate and top with broken mint fudge cookies.
