St. Patrick's Day Lime Jello Cookies with Key Lime Icing
A recipe by A Sprinkle of This and That

Ingredients:

3/4 cup of butter

1/2 cup sugar

3oz package of lime flavored Jello gelatin

2 eggs

1 tsp vanilla

2 1/2 cups of flour

1 tsp baking powder

1 tsp salt


Preheat oven to 350 degrees.


Cream the butter and the sugar.  Next add the lime Jello gelatin, eggs and vanilla.  Blend in the flour, baking powder and salt. 


Roll the dough into 1 inch balls and place on a greased baking sheet.  Flatten down with the palm of your hand.


Bake at 350 degrees for about 12-15 minutes.  Remove to wire rack to cool.


Now for the key lime flavored icing...


Ingredients:

1/2 cup butter

3 Tbsp key lime juice

1 tsp vanilla

1 16oz package powdered sugar

1-2 Tbsp milk

green food coloring


Cream the butter, key lime juice and vanilla together.  Mix in the powdered sugar.  Then add the milk.  Add 1 Tbsp at a time until the icing is the consistency you like.  Again, add 1-2 dropfuls of green food coloring until you reach the desired color.
