No Bake Mint Cheesecake Parfaits
A Sprinkle of This and That Recipe

Ingredients:

2 8 ounce blocks of cream cheese

2/3 cup sweetened condensed milk

1/4 tsp mint extract

2 cups heavy whipping cream

1/4 cup powdered sugar

1 package of mint cream sandwich cookies

chocolate jimmies, reserved cookies, gray nonpareils

Directions:

Blend cream cheese, sweetened condensed milk and mint extract until well combined.  In a separate bowl, whip heavy whipping cream and powdered sugar until stiff peaks form.  Fold the whip cream mixture into the cream cheese mixture.

Break up the mint cream sandwich cookies into smaller chunks.  Reserve some whole ones for the top.   Layer the cream cheese mixture followed by cookie crumbles and then more of the cream cheese mixture.  Top with a whole mint cream sandwich cookie and sprinkles.  Store in the refrigerator until ready to serve.
