Mint Pea Hummus

Mint Pea Hummus
A Sprinkle of This and That

Ingredients:

1 cup frozen peas

1/3 cup tahini

1/4 cup fresh mint leaves, chopped

pinch of salt

vegetable broth

Directions:

Cook frozen peas for 2 minutes in a pot of water.  Strain peas from the water.  In a food processor. puree peas, tahini, chopped mint leaves and salt.  Add vegetable broth until you reach the desired consistency (less vegetable broth for thicker hummus).
