Lime Chicken Thighs with Chipotle Rice

Ingredients to make lime chicken:

8 chicken thighs

1 Tbsp lime juice

zest from 1-2 limes

2 Tbsp minced garlic

2 Tbsp olive oil

salt and pepper to taste


Preheat oven to 425 degrees.  Whisk together the lime juice, lime zest, garlic and olive oil.  Rub the mixture onto each chicken thigh.  Place the chicken into a large roasting pan.  Sprinkle with salt and pepper. Roast the chicken for about 25-30 minutes.  Serve with Chipotle Rice.

Ingredients to make Chipotle Rice:

2 cups Basmati rice

4 cups water

1 tsp salt

2 Tbsp lemon juice (or juice of 1 lime)

2 Tbsp chopped cilantro


Place Basmati rice in a saucepan.  Add the water.  Bring to a boil, then turn heat to low.  Simmer, covered for about 15 minutes or until all water is absorbed.  Place cooked rice into a large serving bowl.  Add the salt and lemon juice.  Fluff the rice.  Sprinkle in the cilantro until mixed evenly.  Serve with the Lime Chicken Thighs.
