Frozen Creme de Menthe Cupcakes

Frozen Crème de Menthe Cupcakes
A Sprinkle of This and That Recipe

Ingredients:

1 dozen fudge mint cookies

4 cups vanilla ice cream, softened

1 1/2 cups creme de menthe mint baking chips

chocolate syrup

Directions:

Line a muffin pan with cupcake liners.  Place a fudge mint cookie in the bottom of each muffin cup. In a large bowl, place 4 cups of your favorite softened vanilla ice cream.  Mix in 1 1/4 cups of creme de menthe mint baking chips.  Put spoonfuls of the creme de menthe ice cream onto each fudge mint cookie.  Place in the freezer for 3-4 hours.  Remove and pour chocolate syrup (any amount you want) onto each frozen cupcake.  Evenly distribute remaining 1/4 cup creme de methe mint baking chips on top of each frozen cupcake.  Return to the freezer until ready to serve.
