Easy Mini Minty Brownies

Ingredients for mini brownies:

1 brownie mix

(ingredients required on box mix may vary from box to box but is typically 2 eggs, 1/4 cup water, 3/4 cup vegetable oil)

2 boxes Jr. Mints

non-stick cooking spray

Ingredients for buttercream icing:

1/2 cup butter, softened

1 cup powdered sugar

1 Tbsp milk

3 drops green food coloring

white sprinkles

Directions:

Preheat oven to 350 degrees.  Follow brownie package directions.  Spray mini muffin pan with non-stick spray.  Fill each cup halfway with brownie batter.  Cook for 15-18 minutes at 350 degrees.  Remove from the oven and press 1 Jr Mint into the center of each cooked brownie.  Let sit for 20 minutes before removing the mini brownie from the pan otherwise it is a goopy mess.  While the brownies cool, make the icing.  Mix together softened butter and powdered sugar.  Add the 1 Tbsp milk and 3 drops of green food coloring.  Frost the brownies.  Add white sprinkles and an additional Jr. Mint.
