Creamy Chicken Pasta with Sun Dried Tomato

2 Tbsp minced garlic

1 6.5 ounce sun-dried tomato in olive oil

2 cups cooked, shredded chicken

3 cups cooked mostaccioli or penne pasta

1 cup half and half

1 cup fresh, shredded Parmesan cheese

1 Tbsp basil

1 tsp salt

1 tsp red pepper flakes


Boil pasta.  Reserve 1/2 cup pasta water before draining the pasta.

Drain sun-dried tomatoes, but reserve 1 Tbsp of the oil.  Saute sun-dried tomato oil and 2 Tbsp minced garlic until fragrant, about 2-3 minutes.  Add cooked, shredded chicken.  Saute an additional 2-3 minutes.  Toss in cooked pasta.

Add the half and half,  3/4 cup Parmesan cheese, basil, salt and red pepper flakes.  Add pasta water.  Stir to coat and serve with remaining fresh, shredded Parmesan.
