1/4 red onion, chopped
1/2 cup radishes, finely sliced
1 cup shredded green cabbage
2 tablespoons mayonnaise
2 1/2 teaspoons salt
2 1/2 teaspoons pepper
4-5 chicken thighs
2 tablespoons smoked paprika
2 teaspoons garlic powder
1 cup barbecue sauce + more for sandwiches
8 mini hamburger buns
In a medium bowl, combine mayo, cabbage, red onion, radishes, and 1/2 teaspoon of the salt and 1/2 teaspoon of the pepper to make coleslaw. Mix until combined, cover, and refrigerate for about 20-30 minutes.
Combine smoked paprika, garlic powder, and the remaining salt and pepper in a small bowl to form a spice rub for the chicken. Rub the spices on the chicken until completely covered.
Place chicken on grill and coat each side with barbecue sauce. Grill until cooked all the way through, about 5 minutes per side.
When the chicken is almost done, toast hamburger buns on the grill.
Remove chicken and cut into 8 pieces to fit your mini hamburger buns.
Assemble sliders by placing a piece of chicken on each bun and topping with a bit more barbecue sauce and the coleslaw.
Serve immediately, and enjoy!
