This was just okay. I don't know if amaranth lends itself very well to stir fry -- it's a bit too fine and gelatinous. The flavor was good, though; I really liked the savory taste brought by toasting the amaranth first. I used the recipe below, but modified it to fit the contents of my fridge. I added red pepper, garlic and onion and eliminated mushroom, scallion and leeks. 1 cup Amaranth; uncooked ? teaspoon Sea salt 1 tablespoon Olive oil 1 cup Leeks; sliced ? cup Mushrooms; sliced ? cup Green peppers; sliced 1 teaspoon Soy sauce ? cup Whole wheat bread crumbs ? cup Scallions; sliced ? cup Pumpkin seeds; toasted Rinse and drain amaranth. Dry roast amaranth in a hevy skillet over medium heat for 5 minutes. Bring 3 cups water and salt to a boil. Stir in amaranth and return to a boil. Lower heat and place a flame deflector or heat diffuser under the pot. Cover and simmer for 35 minutes or until all water is absorbed, stirring occasionally. Heat a skillet and brush generously with oil. Add leeks and saute for 5 minutes. Add mushrooms and peppers and saute for 10 minutes, stirring often. Sprinkle with soy sauce and one teaspoon water. Sprinkle bread crumbs over top of vegetables. Place amaranth on top of crumbs. Cover and heat through. Stir to combine all ingredients, place in a serving dish and garnish with scallions and pumpkin seeds. Per serving: 340 cal; 11 g prot; 237 mg sod; 51 g carb; 11 g fat; 0 mg chol; 93 mg calcium From astray recipes.

Serving: I quite like the soup in its natural state just with cracked pepper. If you want to "Jazz" it up a bit add a dollop of cream, sour cream or even natural yogurt (the later two giving a nice tang) with plenty of chopped chives or parsley, croutons and a shave of parmesan cheese would also go well. Jazzed up and served with crusty bread or hot garlic bread it makes and adequate complete meal. In the picture I have added low fat sour cream, cracked pepper and chopped chives. It was very yummy. Storage: This recipe with my big over 6kg pumpkin has made approx 5.5 litres of thick pumpkin soup. My household has big eaters so I have set aside approx 2.5 litres to freeze for a complete meal, that sounds a lot but by the time 5 of us have a big bowl, and some of the family, two big bowls it will all be eaten bar a scraping. I have saved about a 2 litre portion to pop in the fridge for on the go lunches over the next few days. I will take it to work, the kids are on school holidays so they can fix themselves soup and a sandwich for lunch, The other two smaller containers are lunch portions to freeze for work lunches next week. I had a bowl and a half for lunch today….it goes a long way. It freezes quite well and reheats in either microwave or stovetop.
