Roasted Pork Belly with Fresh Corn and Apple-Pear Sauce
Roasted Pork Belly with Fresh Corn and Apple-Pear Sauce
Nathan Branch ©2011 A roasted pork belly with "cracklin'" -- i.e. the skin roasted at a high enough temperature so that it's crispy and chewy, but the meat is still moist. The meat comes from a local organic, free-range farm, plus fresh corn on the cob (organic) and apple sauce I made myself. The apple sauce and roast pork belly recipes are from The River Cottage Meat Book by Hugh Fearnley-Whittingstall.
