Bacon and Cheese Tater Tot Breakfast Casserole

1 32 oz bag of Tater Tots
2 lbs bacon cut into lardons 
1 small red onion, chopped 
2 cups shredded Monterrey Jack or your favorite cheese
8 eggs
1 cup milk
1 tsp Johnny's Seasoning 
Chives, chopped

Preheat oven to 350 degrees.

Cut bacon into lardons or small strips and cook. When bacon is mostly cooked throw onions in and cook until bacon is cooked through. Drain grease.

While bacon is cooking, grease a 9x13 casserole dish. Put the tater tots in the bottom.

Add bacon, onions, and shredded cheese to tater tots and mix thoroughly. 

In a separate bowl whisk together eggs, milk, and chives. Add in Johnny's Seasoning (I almost never measure my seasonings so you can add more or less. You could also leave the Johnny's out and add other seasonings if you prefer). Pour egg mixture over tater tots and gently fold the egg mixture in with a spatula.

Bake in 350 degree oven for approximately 45-50 minutes, or until eggs are set.
