Spanish Seafood Stew

1 tablespoon olive oil
1/2 onion, finely chopped
1 garlic clove, minced

1/2 teaspoon ground turmeric
1/2 teaspoon paprika
1/4 to 1/2 teaspoon chili flakes
1 bay leaf
salt to taste

200ml vegetable or fish stock
1 tablespoon tomato paste
1 capsicum pepper (red or green), deseeded and thinly sliced
500g/1 lb mixed seafood (e.g. squid rings, peeled prawns, mussels meat)

1/4 cup white wine
splash of cream (optional)

Serves 2-3
Heat olive oil in a pan over medium heat. Add onion and fry until softened. Add garlic, turmeric, paprika and chilli flakes and cook for another minute. Add bay leaf, stock, tomato paste, sliced pepper, seafood mix and white wine. Simmer gently until seafood is cooked, about 5 minutes. Season to taste. Stir in splash of cream (optional). Serve with rice or rustic bread.
