Grain Free Spice Cookies

1 cup chickpea flour
1/4 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1 pinch ground cloves

2 tablespoons coconut oil, softened
1/3 cup honey
2 tablespoons molasses
1 large egg, lightly beaten

1/4 cup almonds, finely chopped

Yields 20-25
Preheat oven to 160C/325F. Line baking sheet with parchment paper.

Sift together chickpea flour, salt, baking soda, cinnamon, ginger and cloves. Set aside.
In a medium bowl, combine coconut oil and honey. Stir in molasses and beaten egg.
Combine wet and dry ingredients. Refrigerate dough for at least 30 minutes.
Place dollops of the size of cherry on the baking sheet. Sprinkle with some chopped almonds. Bake for about 12 minutes, or until they turn golden brown. Cool completely on cooling rack.
Keep in airtight container.
