Banana Soda Bread with Apple Raisin Filling

2 cups whole wheat flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon

1/2 cup buttermilk
1 egg, lightly beaten
2 ripe medium bananas, mashed

1 medium apple, grated
1/4 cup chopped walnuts
1/4 cup raisins

Yields 1 loaf
Preheat oven to 200C. Grease loaf pan or line with parchment paper.

In a large bowl, combine flour, baking soda, salt and cinnamon. In another bowl, combine buttermilk, beaten egg, and mashed bananas. Mix wet and dry ingredients until well combined.

In yet another bowl, mix grated apple, chopped walnuts and raisins.

Divide the batter into three batches. Lay out the first batch at the bottom of the loaf pan. Spread half the apple raisin nut mixture over it. Cover by another layer of the batter. Pour the remaining apple raisin nut mixture over it and cover by the last batch of batter.

Bake in the preheated oven for about 45 minutes or until toothpick comes out clean. Let cool a little before taking out of the pan. Let cool completely on wire racks.
