Simple Salisbury Steak

2 C. diced, fresh mushrooms, divided

1 ½ lbs. ground beef

½ C. crushed saltines or bread crumbs

1 egg, beaten

¼ C. milk

3 TBSP. ketchup, divided

½ tsp. onion powder

½ tsp. thyme

Salt and pepper to taste

2-3 tsp. oil

Beef gravy (store bought or homemade)

 

Dice mushrooms.  Add 1 C. mushrooms to beef mixture along with the crackers, milk, beaten egg, 1 TBSP. ketchup, onion powder, Thyme, salt and pepper.  Mix well.

Shape into 4-5 patties (they will be thick).

In a large skillet heat oil over medium heat.  Add the patties and cook 6-7 minutes per side or until both sides are golden brown.

Remove patties from skillet and add the remaining mushrooms to the pan and cook 1-2 minutes.

Add the gravy and 2 TBSP of ketchup to the mushrooms and bring to a simmer.  Add the patties to the gravy mixture, cover, and simmer over low heat 30-60 minutes.
