Simple Pancake Muffins

*Pancake Recipe:
2 eggs
2 C. flour
1 1/2 C. milk
2 TBSP sugar
4 TBSP vegetable oil
6 tsp. baking powder
1/4 tsp. salt
**mix ins

Directions:
Pre heat oven to 350
Spray muffin tin with non-stick spray, set aside.
In a large bowl, beat eggs until light and fluffy.
Beat in additional ingredients just until incorporated (lumps are OK).
Pour batter into muffin tin until half full. Add mix ins and push down into batter.
Bake 12-15 minutes or until a tooth pick in center comes out clean.

*Use your favorite pancake mix or recipe
**If using meat be sure to pre cook it before adding to muffins.

To Freeze: Cool completely and add to freezer bag or freezer safe container. Thaw overnight in refrigerator or warm frozen muffin in microwave.
