Sausage Tortillini Soup

1 lb. Italian Sausage, casings removed
1 large onion, diced
2 tsp. minced garlic
2 tsp. oil
20 oz. tortellini
28 oz. crushed tomatoes
2-8oz. cans tomato sauce
1/2 C. heavy cream
2 C. fresh spinach
5 C. chicken stock
1 tsp. Italian seasoning
Salt and pepper to taste
Parmesan cheese

In a large stock pot add the oil over medium heat.  Add the Italian sausage and cook 5-7 minutes, crumbling the sausage as you cook, or until the sausage is no longer pink. Add the minced garlic and cook for an additional minute

Add the tomatoes, broth, heavy cream, Italian seasoning, and salt and pepper. Bring to a boil and reduce heat to low, cover and simmer for 20-30 minutes.

Add the spinach, and tortellini and simmer until the tortellini is tender.

Garnish with parmesan.
