Sweet and Sour Chicken

3-4 boneless, skinless chicken breasts, cut into 1 inch pieces
Salt and Pepper
1 C. corn starch
2 large eggs, beaten
1/4 C canola oil
1 large bell pepper, chopped

3/4 C granulated sugar
4 TBSP ketchup
1/2 C apple cider vinegar
1 TBSP soy sauce
1 tsp garlic salt 

-Preheat oven to 325 degrees.
-Whisk sauce ingredients in medium bowl until well combined.
-Heat the oil in a large skillet over medium heat. Cut chicken into 1 inch pieces and sprinkle with salt and pepper.
-Place corn starch in a large gallon size zip top bag. Add the chicken to the bag, seal, and shake to coat.
-Whisk eggs together in shallow pie plate.
-Dip the cornstarch coated chicken into the egg and place in a single layer in the hot skillet. Cook 1-2 minutes per side or until nice and golden.
-Place chicken pieces in a baking dish and top with bell pepper and sauce.
-Bake for 25-30 minutes, stirring once to ensure sauce bakes evenly onto chicken.
