Cheesesteak Stuffed Peppers

  green peppers
2 medium or 1 large onion
4-5 garlic cloves
1package baby Bella mushrooms
1/2-3/4 pound deli roast beef, sliced
Provolone cheese
Olive oil

 Pre heat your oven to 400 degrees.
Slice each green pepper in half length wise and remove seeds and ribs.* Pre bake the green pepper shells for 15-20 minutes.*
 Slice onions and mushrooms and finely mince the garlic (or put through the garlic press).

 Thinly slice the roast beef (in strips) and set aside.
In a large skillet heat 3 TBSP of butter and 2-3 TBSP of olive oil and heat over medium heat.
Cook onion and mushroom over medium heat for 15-20 minutes or until caramelized.  Add garlic last 5 minutes of cooking.* Season with salt and pepper when the veggies are done cooking.
Add the roast beef and heat through.
Remove pepper shells from oven and pour out excess water in each shell.  Place a slice of Provolone cheese at the bottom of each pepper.  Fill each pepper with filling.
Top each with another slice of Provolone.
Place in 400 degree oven for 15 minutes and voila! Cheesesteak stuffed peppers.
