Blueberry Streusel Muffins

Muffins:
1  1/2 C. flour
3/4 C. sugar
1/2 tsp. salt
2 tsp. baking powder
1tsp. vanilla
1/3 C. vegetable oil
1 egg
1/3 C. milk
*1 C. blueberries

Streusel:
1/3 C. flour
1/4 C. sugar
2 tsp. cinnamon
1/4 C. butter, cubed



Directions:
Preheat oven to 400 degrees and line a muffin pan with muffin liners.

Combine flour, reserving 2 TBSP of flour to add to blue berries, sugar, salt, and baking powder and mix to combine.  Add the vanilla, oil, egg, and milk and mix until just combined.  Add the reserved flour to your blueberries, toss to coat, and gently fold in blueberries.

Fill muffin cups 3/4 full and top with streusel. 

Bake 18-25 minutes or until toothpick in the center comes out clean.

Cool.competely before storing.

Directions for Streusel
Combine all ingredients in a bowl and mix until incorportated.

*If using frozen blueberries, thaw and drain excess liquid before adding to your batter.
