7 Days: Day 5 - Dinner
Many days over the past few weeks I've elected to eat dinner on the couch while watching TV (you know, the old "waited on hand and foot" thing?). However, I have actually cooked several meals in the last 2 weeks. Tonight's dinner was a recipe from the Pioneer Woman's site called "Drip Beef". It's meant to be cooked in a roasting pan on the stove, but I put it in the slow cooker (it worked perfectly), and then served it with loaded mashed potatoes. We were supposed to have some roasted broccoli and cheese with it, but there was a misunderstanding with the grocery list I made (Hi Doug!). So we just had the potatoes and beef with juice. It was delicious! Fred is watching to see if Doug is bringing him a plate too.
Slow Cooker Pork Chops
5 or 6 thick cut boneless pork chops 1 can condensed tomato soup 1 cup water 2 onions, chopped 3 cloves garlic, minced 1 tbsp brown sugar 2 tbsp vinegar 4 tsp Worcestershire sauce 1 tsp salt 1 tsp whole grain mustard 1 beef bouillon cube 1/4 tsp pepper 1 tsp cornstarch 1/4 cup cold water Place pork chops in slow cooker. Combine remaining ingredients (except cornstarch and 1/4 cup water) and pour over chops. Cover and cook on low for 6 to 8 hours. Remove chops to a serving platter and keep warm. Thicken cooking liquid with cornstarch diluted in 1/4 cup water. Serve with noodles, rice or mashed potatoes.
