I found this on And i realized if fudge sounds too easy ,its probably not fudge. This, is not fudge, really. More like sugary sludge, but is delicious if you are into diabetic comas. Luckily, I am. 2 c brown sugar 2 c white sugar 3/4 c soy milk dash of salt 12 oz jar peanut butter. I strongly recommend a no sugar added or sugar free version. seriously, there is already 4 cups of sugar going into this thing. 1 tsp cornstarch 1 10 tub of ricemellow fluff 1 tsp of vanilla Mix first 5 ingredients in large pot. Slowly bring to a boil, i recommend on low heat- stirring all the while. Once at full boil, keep stirring and boiling for 7 minutes, or until mix is not grainy. DO NOT try to test this with your fingertips, as you will burn the living crap out of them and have blisters on your fingertips like I do. Plus the practice of tasting food with your fingers is considered unsanitary. ANYWAY, after mix is no longer grainy LOOKING, take off of heat and add rest of ingredients. Beat until sludge begins to thicken. Pour into 9x13 pan if you want skimpier pieces of candy, or 9x9 like this genius did. Garnish with vegan chocolate sauce and Jimmy's if you wish. you're welcome.

once in a while, we all have baking disasters!! my mom has always told me about this "tunnel of fudge" cake she used to love when she was younger. it was made with a box of powdered frosting mix which is no longer manufactured. but watching "cook's country" a few weeks ago i saw them making it! from scratch! so i diligently copied down the recipe and baked one up on saturday as a mother's day surprise. since the inside of the cake is supposed to stay fudgy, you can't test for doneness with the usual toothpick test. i baked it for the recommended 45 minutes, followed the instructions on checking for doneness (cracked top, springs back at edges when touched), and cooled it for the recommended 1 1/2 hours in the pan before turning it out. and when i turned it out, this is what i got. UGH. i baked it again, used a lot of skewers (which all came out equally gooey, as predicted), and finally after 75 minutes got frustrated and took its temperature with my instant-read thermometer. 205. ok whatever... at least i knew it would be safe to eat. it came out fine, though i imagine it would have been a bit fudgier with about ten fewer minutes of cooking time. who knows!
