Self-cooked dinner after work. Coffee ribs is a good combo from home. Coffee worked well with frying ribs. The synergy between both ingredients delivered a finger licking dish. RECIPE FOR COFFEE RIBS A packet of Pork Ribs or Beef Ribs for 2 Marinate: • 2 teaspoons instant coffee powder • 1 tablespoon five spice powder • 1 teaspoon of black pepper powder • 1 tablespoon oyster sauce • 2 tablespoons cooking oil • 1 teaspoon salt Best to marinate overnight How to make? Heat the pan until very hot Pour in some cooking oil to heat up Put the ribs into the pan and turn the heat half way down Cook the meat until they are almost cooked (make sure the inside is cooked)for about 15 minutes Take ribs out and leave aside In another bowl, prepare glazing sauce: • 2 tablespoons of Kecap manis • 1 tablespoon Chinese soy sauce • 1 tablespoon oyster sauce • 1 tablespoon honey • 1 teaspoon instant coffee powder • 1 teaspoon five spice powder • Black pepper powder (just enough) Mix together and then pour into the pan with the leftover oil Simmer 1-2 minutes on low heat to thicken sauce and then place in the ribs Stir fry the ribs 3-5 minutes until the sauce thickens and glazes the ribs Serve

Todays theme ingredient for cooking lab was rack of lamb. We learned how to butcher and fillet the meat off the spine and ribs. It was quite grueling work, but lots of fun. (It involves lots of cutting through bone and scraping of tendons etc..) We pan-seared it to a rosee doneness (about medium-rare to medium). Here is my result, which I believe is just the right condition: Somewhere between a medium rare and medium doneness known as ''rose'' Notice the small amount of red juice. Yum :P
