Mango Salsa

1 semi-ripe mango (I don't like juicy ripe - too mushy)
1/2 medium red onion
1 red pepper
1/2 medium jalapeno pepper (use gloves please to de-seed and chop)
3 tbs. chopped cilantro (you can use parsley if you don't like cilantro)
3 tbs. freshly squeezed lime juice
salt and pepper to taste

Chop everything to a fine chop. Mix in a bowl, dress with lime juice and salt and pepper. Refrigerate for a few hours. Makes a great topping for fish, pork and chicken.
