Note that this is not a paella valenciana! Paella is the pan itself, since paella means pan in Catalan, and a rice that is cooked in the pan is just an arros/arroz a la paella. This is just one way to cook such a rice. I always improvise with whatever is in the fridge/season. For this one I used the following, for two very hungry people or up to 4 people :) 6 rabbit front legs (could be chicken or even fish, or a mix, squid rings are great for this) 2 smallish carrots 2 branches of celery (not the leaves) 1 small leek Or whatever vegetables you have! Eggplant doesn't work very well for this. 1 can of mushrooms (drained 170g) or fresh if you have, if so add them earlier on. A small bowl of frozen peas (around 140g). 5 handfuls (140g) round, bomba, risotto, paella... style rice. Olive oil, spices to taste: salt, saffron threads, nora pepper (I find it in Carrefour, powdered), spicy pimenton (or paprika), a broth cube (chicken for example) or real broth. Don't omit the saffron though ;) I use a big and heavy pan. Sear the rabbit legs on a high heat until they brown on the outside on a bit of olive oil (2-3 tablespoons). Put them aside. Lower the fire to medium and add the carrot, celery and leek to the same oil, you may need to add a little more. Cook for a bit until they soften somewhat, then add the drained mushrooms, and let it cook a little more. Add the rice, raw, and stir in, leave for a while to absorb some of the oil. Add the frozen peas (no need to defrost), the spices (add curcuma if you want the rice to be yellow), and a glass of warm water with the broth cube or just warm broth. Mix everything well, then add the legs on top. If you use fish, it needs less cooking, so add it again to the pan when the rice is half done. You will likely need to add more warm water now and later as it evaporates. Keep an eye on it and the water level, and try the rice now and then. Correct the salt. You may turn the legs once after a while, but don't stir the rice, leave it be. Add more water as necessary. The dish is done when the rice is cooked. It is meant to be slightly watery, but this is to taste. It may take some practice to get the level of humidity you like. Enjoy!

Curry beef with lettuce and white rice - dead easy and quite delicious. Made via my Nintendo DS' recipe program ???? (kondate zenshuu - menu library) Get 250 grams of beef, preferably in strips, but I figure ground beef or cube would work just as well. Put it in a bowl with your Spices Of Choice - I used cumin, black pepper and garlic powder - keeping in mind that you're going to add curry powder at the end. Throw in some cornstarch just to coat the beef a little, and get it nice and mixed up. Heat up some oil in a frying pan on a strong flame. Throw the beef in there. Once it's just about all brown, drop in your curry powder. I don't really measure things when I cook, but I figure it was about half a tablespoon. Your mileage may vary. Stir it about in the pan for another minute or so, and serve on top of white rice, with fresh lettuce torn into large pieces. Not including time to cook the rice, this takes about ten minutes to make. Next time I make it, I may saute some onions in there before I add the beef - if anyone wants to give that a try, let me know how it works. Plus, I may not be too off-base in thinking that a few sliced cherry tomatoes might be just the thing to drop in among the lettuce, but then I am a compulsive adder when it comes to recipes. Just can't leave well enough alone.... *smile* Serves one of me, 2 if you're eating it with another dish or you eat light.
