Roasted Tomato Pasta Sauce

7-8 large tomatoes or 12-13 small tomatoes

6 cloves of garlic

dried or fresh basil



olive oil

1.  Preheat the oven to 400 degrees.

2.  Coat a large rimmed baking sheet with olive oil.

3.  Quarter tomatoes and lay on the baking sheet.

4.  Place whole gloves on the baking sheet.

5.  Sprinkle everything liberally with basil, salt and pepper.

6.  Roast in the oven for 1 hour or until a bit charred and soft.

7.  Remove the pan from the oven and allow to cool.

8.  Place cooled ingredients into a blender and puree.

9.  Eat immediately over pasta or freeze for later use.
