Jenny's Sweet Potato Casserole

*I halved this recipe in an 8x8 baking dish and it worked awesome!


5 sweet potatoes

2 c. frozen veggies

1/3 bottle of Wishbone Chipotle Ranch dressing

4 boneless, skinless chicken breasts

1 McCormick Grillers Chipotle seasoning packet


1. Place the chicken in a crock pot with a cup of water and the seasoning packet. Cook on high for 4 hours or low for 6 hours until tender. When cooked shred with a fork.

2. Wash sweet potatoes, prick with a fork and cook in the microwave in two minute intervals until soft. Remove, split in half and allow to cool.

3. Spray a 9x13 baking dish with cooking spray. When sweet potatoes are cool enough to handle, scoop out the potato, place in the bottom of the dish and mash with a fork, spreading to cover the bottom of the pan.

4. Layer half of the dressing, the frozen veggies, the shredded chicken and the remainder of the dressing.

5. Bake at 350 degrees for 30 minutes or until heated through. Serve warm.
