Easter Egg Cupcakes

1 Pillsbury Funfetti cake mix

16 oz. Pillsbury Funfetti frosting

1 c. sweetened shredded coconut

green colored sugar

Cadbury mini Chocolate Easter Eggs


1.  Preheat the oven to 350 degrees.

2.  Place paper liners into a 12-count muffin pan and a 12-count mini muffin pan {will only use 9}.

3.  Mix the cake mix according to directions.  Using a cookie scoop, place the batter into the paper liners.  I used two scoops for each regular cupcake and one scoop for each mini cupcake.

4.  Bake for 20-24 minutes or until golden brown and springy to the touch.  Put the mini cupcakes in with 15 minutes left to bake so they finish at the same time.  Remove from the oven and allow to cool.

5.  Spread cupcakes with the Funfetti frosting, Funfetti sprinkles, green colored sugar, coconut and top with three mini Cadbury chocolate Easter eggs.

6.  Store in an airtight container for freshness.
