Crunchy Peanut Butter Granola

8 c. old fashioned oats

2 c. pecans, chopped

1 c. cashews, chopped

1/2 c. brown sugar

1 t. salt

1 t. cinnamon

1/2 c. coconut oil

1/2 c. honey

3/4 c. peanut butter

2 t. vanilla


1.  Preheat the oven to 300 degrees.  Grease a high-rimmed baking sheet.  I prefer using my roasting pan.

2.  In a large bowl combine all the dry ingredients; oats, pecans, cashews, brown sugar, salt and cinnmon.  Stir to combine.

3.  In a large glass measuring bowl or cup place the wet ingredients; coconut oil, honey, peanut butter nd vanilla.  Microwave until full melted.  Pour this wet mixture over the dry ingredients and toss to coat.

4.  Pour the granola into your roasting pan.  Bake for 1 hour, stirring every 15 minutes.  Allow to cool completely before bagging up.
