Cinnamon French Toast Casserole

1/4 c. sugar
1 t. cinnamon
1 loaf of Italian or French bread, cubed
3 eggs
1 T. vanilla
2 T. sugar
3/4 t. salt
1 3/4 c. milk
2 T. butter, cubed

1.  Preheat oven to 350 degrees.
2.  In a small bowl combine the 1/4 c. sugar and 1 t. cinnamon.  Grease an 8x8 baking dish and pour some of this mixture into the pan, shaking to coat the bottom and sides.  Reserve any of the leftover for topping.
3.  Whisk together the remaining ingredients and add in cubed bread, tossing to coat.
4.  Pour into the baking dish, topping with reserved cinn/sugar mixture and dot with cubed butter.
5.  Bake for 50-60 minutes uncovered.  Serve with maple syrup, fresh fruit or whipped cream.

*Can use day old loaf bread, the harder/firmer bread works best*
