Caramel Pecan Pancakes

2 eggs

2 c. buttermilk

1/4 c. vegetable oil

1/4 c. sugar

1 T. vanilla extract

2 t. baking soda

1 t. baking powder

1/2 t. salt

2 c. flour

1 c. chopped pecans

1/2 bag of Kraft Caramel Bits


1.  In a bowl combine the wet ingredients; eggs, buttermilk, oil and vanilla.  Whisk to combine.

2.  Sift in the dry ingredients; sugar, baking soda, baking powder, salt and flour.  Gently stir until just combined.  Don't overmix.

3.  Heat a large griddle or skillet over medium heat.  Spray with cooking spray.  Ladel on pancake batter in 4-5 inch rounds.  Top the pancake with chopped pecans and caramel bits.  When the pancake starts to bubble, gently flip and continue cooking another minute on the other side.

4.  Remove the pancakes when finished to a plate to keep warm while continuing to cook the entire batch.  This recipe makes around 10-15 pancakes, depending on size.

5.  Top with butter and maple syrup.
