Beef Enchiladas

1 lb. ground beef
1/2 to 1 can black beans, rinsed
1 can diced tomatoes or Rotel tomatoes
1/2 to 1 can of red enchilada sauce, plus another can for topping
1 c. cooked rice
7-10 fajita size flour tortillas
2 c. shredded cheese

1.  Cook and drain ground beef.
2.  Mix the next 4 ingredients together.
3.  Divide the meat mixture between the tortillas, roll up and place seam side down in an 8x8 pan.  Top with additional red sauce. Top with cheddar cheese, bake at 350 degrees for 20-30 minutes.
