Well, it just looks fancy. It's really just a chicken boob, asparagus, and potatoes. Recipe: Oil and salt the taters, and chuck them in a 350 oven. Slice chicken breasts horizontally, and pound the halves out thin. Season them. I used dill, garlic powder, S&P. Snap the tough ends off the asparagus, and put a small bunch at the end of each piece of chicken. Roll em up, and secure with a toothpick. Season some flour with S&P. Heat up a skillet with about 1/2" of EVOO in it -- pretty dang hot, but not smoking. Roll the chicken bundles in the flour, and put them in the pan. Brown them lightly on all sides. Put them on a rack in a roasting pan, and put them in the oven with the potatoes. While those are cooking, drop a couple Tbsps of butter in a small saucepan, over medium heat, add an equal amount of flour, and make a light roux. Add chicken stock and lemon juice, until you get the consistency you want. Season with S&P, and add capers, plus some of their brine. I believe it took about 20 minutes in the oven for the chicken and asparagus to be cooked through. Remove the potatoes and the chicken, and let them rest for a few minutes, before serving with the piccata sauce. Don't forget to take out the toothpicks!

This is an adaption of a Rachel Ray recipe, Chipotle Cashew Chicken. The seitan replaces the chicken and this time I used smoked paprika in place of the chipotle powder. It made it like a paprik.
