I always found this hilarious. Cheesecakes without cheese :) They are super yummy and in the Edmonds cookbook [New Zealand]. Flaky pastry base with raspberry jam inside and a sponge topping with pastry circle to top. Flaky pastry Raspberry jam 125gr sugar 125gr butter 2 eggs 150gr SR flour Cream butter & sugar. Beat eggs & add altern. with sifted flour. Roll out pastry and line about 21 patty tins. Put 1 tsp jam in bottom of each then large spoonful of cake mix on top. Place small piece pastry on top. Bake 20 mins approx @ 200degC NOMMMM
