No-Bake Oat Energy Bites with Peanut Butter, Maple and Chocolate Chips


Prep Time: 15 minutes

Chill Time: 30 minutes

Yield: 15-16 energy bites

  • 1-1/2 cups old-fashioned oats
  • 1/4 cup very finely chopped pecans (optional)
  • 1-1/2 teaspoons ground cinnamon
  • 1/2 cup creamy peanut butter
  • 3 tablespoons pure maple syrup
  • 1-1/2 tablespoons unsalted butter, melted and slightly cooled
  • 1/3 cup mini semi-sweet chocolate chips

1. Line a baking sheet with parchment paper and set aside. Combine all ingredients, except chocolate chips, in a large mixing bowl and stir with a wooden spoon until ingredients are well-combined. Fold chocolate chips into the peanut butter mixture. 


2.  Roll the peanut butter mixture into tightly packed, 1-1/2 inch balls and place on parchment lined cookie sheet.  Refrigerate for 30 minutes before serving.


3. Enjoy! Keep refrigerated in a covered container for up to one week.
