Chocolate Chip and Cranberry Granola Bars

Servings:  18 (4 x 1.5 inch) bars, but will vary based on how you slice them.


  • 1/2 cup (1 stick) salted butter, room temperature
  • 1 cup light brown sugar
  • 1 large egg
  • 3 tablespoons pure maple syrup
  • 1 teaspoon pure vanilla extract
  • 3/4 coconut flour (or sub all-purpose flour)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/3 cup milk (or sub your fave milk alternative)
  • 1-1/2 cups oats
  • 1/3 cup finely chopped pecans
  • 1 cup dried cranberries
  • 1 cup sweetened shredded coconut
  • 1 cup mini-chocolate chips (semi-sweet)


1. Pre-heat the oven to 350° and prepare a cookie sheet (15 x 10.5) with aluminum foil and set it aside. In large mixing bowl, cream butter and brown sugar together until light and fluffy. Mix in the egg, maple syrup and vanilla extract and set bowl aside.

2. In another medium-size bowl, mix together coconut flour, baking soda, salt, and cinnamon. Add the dry mixture, alternating with milk, to the butter mixture. Fold in the pecans, cranberries, coconut and chocolate chips.  

 3. Turn out the batter onto the prepared baking sheet and using your hands or a spatula, press the dough into a 1/2-inch thick rectangle (roughly 12 x 9). Bake for 20-25 minutes or until the top and sides are lightly browned.  

4. Allow pan to cool on a rack and allow granola to cool completely before cutting (helps keep it from crumbling). Cut into bars and enjoy!
