Yogurt Banana Bread

Yogurt Banana Bread with Toasted Walnuts

(A Little Bit Crunchy A Little Bit Rock and Roll)


Ingredients:

1 cup whole wheat flour (I use King Arthur's white wheat)

1 cup all purpose flour (I use King Arthur)

3/4 cup sugar

3/4 teaspoon baking soda

1/2 teaspoon salt 

1 cup toasted walnuts, chopped

3 large very ripe bananas

1/3 cup whole milk yogurt

2 eggs, lightly beaten

6 tablespoons unsalted butter, melted and cooled slightly

1 teaspoon vanilla


Directions:

1. Preheat your oven to 350 degrees F. Prepare a loaf pan by lightly greasing it.


2. In a medium sized mixing bowl, stir together the flour, baking soda, and salt with a whisk. Set aside.


3. In a large bowl, mash the banana very well with a fork or potato masher. With a wooden spoon, stir in the sugar, yogurt, eggs, butter, and vanilla. Stir in the dry ingredients and walnuts. Pour into prepared pan.


4. Bake for 55-65 minutes until the center appears done. Cool in the pan for 5 minutes on a wire rack. Remove from the pan and continue cooling.
