Refrigerator Raisin Bran Muffins

(from A Little Bit Crunchy A Little Bit Rock and Roll)


1 1/4 cup buttermilk

1/4 cup oil

1 egg

1 1/2 cup raisin bran cereal (I like Trader Joe's)

1 1/4 cup flour (I used whole wheat and some ground flax seed)

1/2 cup sugar

3/4 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 cup chopped walnuts (optional)


1. Mix the dry ingredients together in one bowl  and stir with a whisk.

2. In another bowl, whisk together the wet ingredients. 

3. Add the wet to the dry and stir. 

4. Keep covered and refrigerated overnight or up to 2 weeks.

5. Bake in a preheated 400 degree F. oven for 20-25 minutes.
