Raw Cookie Dough Balls

Raw Cookie Dough Balls (from A Little Bit Crunchy A Little Bit Rock and Roll)


Recipe 1: 

4 tablespoons room temperature, unsalted butter (or apple sauce)

4 tablespoons brown sugar (or maple syrup)

1/2 cup peanut butter (or raw natural peanut butter)

1 teaspoon vanilla

2/3 to 3/4 cup four (or whole wheat flour)

1 cup oats

1/4 to 1/2 cup semi sweet 


Beat the butter and brown sugar together in a mixer.  Beat in the peanut butter, vanilla and flour.  Stir in the oat and chocolate chips.


Use a 1 1/2 inch cookie scoop and roll them into balls.  Chill until firm. 



Recipe 2: 

4 tablespoons room temperature, unsalted butter (or apple sauce)

4 tablespoons brown sugar (or maple syrup)

1/2 cup (heaping) raw almonds ground in the food processor until soft

2/3 to 3/4 cup four (or whole wheat flour)

1 teaspoon almond extract

1 cup oats

1-2 tablespoons raw, unsweetened coconut

1/4 to 1/2 cup semi sweet chips


Beat the butter and brown sugar together in a mixer.  Beat in the almond butter, almond extract and flour.  Stir in the oats, coconut and chocolate chips.


Use a 1 1/2 inch cookie scoop and roll them into balls.  Chill until firm. 



Recipe 3: 

4 tablespoons room temperature, unsalted butter 

4 tablespoons brown sugar 

4 tablespoons granulated white sugar

1 teaspoon vanilla extract

1/3 cup four 

1/2 cup oats 

1/4 to 1/2 cup semi sweet chips or butterscotch chips


For the drizzle: 1/4 cup chips melted with 1/2 teaspoon vegetable oil.


Beat the butter and brown sugar and white sugar together in a mixer.  Beat in the vanilla extract and flour.  Stir in the oats and chips.  (Add a little more four or oats until the dough can be rolled into balls.)


Use a 1 1/2 inch cookie scoop and roll them into balls.  Chill until firm.
