Quinoa Granola

Quinoa Granola  (from A Little Bit Crunchy A Little Bit Rock and Roll)


7 cups old-fashioned rolled oats

1 cup quinoa, washed and drained

2/3 cup raw honey

1/3 cup freshly squeezed orange juice

1/4 cup fat (tahini, butter, or coconut oil)

1/4 cup pepitas (optional)

1/4 cup walnuts, chopped

1/4 cup almonds, chopped

2-3 Tbs. ground flax seed

1 teaspoon cinnamon


1. Preheat your oven to 275 degrees F. Melt the honey, orange juice, and fat together.

2. On a large sheet pan or divided between two cast iron pans, mix together the remaining ingredients. Pour the liquid over and stir well.

3. Bake for 1 hour, stirring ever 15 minutes.
