Pomegranate White Chocolate Chip Cookies

Pomegranate White Chocolate Chip Cookies (A Little Bit Crunchy A Little Bit Rock and Roll)

1/2 c. unsalted butter, at room temperature

1/2 c. light brown sugar

1 large egg

1 tsp. vanilla

1 1/4 c. flour

1/2 tsp. baking powder

1/2 tsp. baking soda

1/4 tsp. salt

1 c. old fashioned oats

1 c. white chocolate chips

1 c. pomegranate arils


1. Preheat oven to 375 degrees F.  Line a cookie sheet with parchment paper.

2. Cream together butter and sugars.  Add egg and vanilla.  

3. In a separate bowl, stir together the dry ingredients with a whisk.  Slowly add this to the batter.  Stir in the oats and white chocolate chips.

4. Add (by hand) about 8 pomegranate arils to a small ball of dough.  (If you try stirring these into the batter they will burst.)

5. Bake for 8-10 minutes.  Cool on the sheet pan for 10 minutes on a cooling rack.  Transfer the cookies to a cooling rack to finish cooling. 

Makes about 2 1/2 dozen cookies.
