Pizza Sauce

Pizza Sauce:
1 small onion, diced
1 clove garlic, minced
pinch of salt and cracked pepper
pinch of crushed red pepper flakes
pinch of oregano
1 (28 oz.) good quality whole tomatoes, no salt, undrained

Saute the onion in olive oil until it becomes transparent.  Add the seasonings and the tomatoes- liquid and all, crushing the tomatoes through your hands.

Boil and simmer until most of the liquid has evaporated and the sauce has thickened.

This will make enough sauce for about 4 pizzas.
